Summary: A Simonds Convert
Comment: When I first bought the book, I was a little put off by the degree to which she Americanized her recipes. She rhapsodizes about being transported back to various exotic locales by the spices and flavors of her "scrumptious," "spunky" and "sassy" dishes (all mildly irritating descriptive terms she repeats frequently) and yet provides seemingly inauthentic substitutions for many of her ingredients. However, after having used several of the recipes (with substitutions), I am a convert. The recipes are quick and easy and have some reasonably authentic flavors. If you are looking for authentic Asian cuisine, this is not the cookbook for you. If you are looking for quick, flavorful meals and are a bit bewildered by the astonishing variety of Asian noodles, this is an excellent book. The instructions are clear, the recipes are excellent and the pictures are beautiful.

Summary: Good, but not Definitive
Comment: I bought this book hoping that it would prove to be a definitive text on Asian noodles. Although that's not what I ended up with, I am happy with the book. Whereas, I thought this books would contain information about the history of Asian noodles and traditional methods of making/preparing them, what I found instead was a good beginner-intermediate recipe book centered around noodles. If you're looking for a book that is culturally rich, you'll have to look elsewhere. If you simply want to learn how to make some delicious noodle dishes you've come to the right place. All of the recipes are simple, straight forward, and produce great tasting results (at least the ones I've tried so far). The author limits herself to dealing with ingredients that are fairly common at American Asian markets, so it should be easy for readers to track down the supplies they need to get started. I suspect there are better noodle books out there (though I haven't found them yet), but this one seems like a good starting point for those interested in Asian cuisine.

Summary: Beautiful book!
Comment: This is an amazing cookbook! It is filled with beautiful pictures. The background information at the beginning of the book is very helpful for finding obscure ingredients or reasonable substitutions for them. The actual recipes are written concisely and thoroughly. I have made a number of the dishes and they have turned out beautifully.
