Summary: A good, practical book for a single cook!
Comment: This is the most-used cookbook in my collection, and I collect cookbooks for single cooks. Unlike many healthy cookbooks, this includes recipes for a variety of main dishes (vegetarian, chicken drumsticks, veal, beef, pork and lamb) rather than an endless series of "boneless skinless chicken breasts." It offers sensible suggestions for managing fresh produce without spoilage (such as a stir fry made from the grocery store take-out salad bar vegetables, rather than using a few pieces from a dozen different whole vegetables, and wasting the rest) and it pays attention to details such as the sizes of cans available in stores. The instructions for each recipe are clear and complete. As a bonus, each recipe has two sets of quantities - for one or two servings if the recipe doesn't make good leftovers, or for two or four servings if the recipe is good the next day! Despite being "healthy" the servings are generous, even satisfying my twenty-something brother. This also includes a comprehensive (but not too long) list of kitchen equipment, and happily, the recipes specify what equipment is needed, and never call for anything not on the basic list. This is a must-have book for any single cook.

Summary: Healthy, Fast, Delicious
Comment: This is my most frequently used cookbook. It has good recipes with ingredients I often have on hand and don't have to spend an hour preparing. It has practical advice, including a wonderful table of microwave cooking instructions for single servings of vegetables. Furthermore, when I'm done, I have something truly delicious to eat. There's nothing like a little Orange-Scented Bisque of Acorn Squash to make a person feel like a gourmet without really having had to work that hard. The desserts are perhaps the simplest of anything, and you can make the custards and puddings in about five minutes plus chilling time.
I live alone and cook for myself most of the time, but I also frequently have a friend or two over for dinner. Ingredients are listed separately for one or two servings, so there is no doubling or halving of recipes. Soups are sometimes given as 2 or 4 servings, assuming you will want some leftovers, and she's usually right about that. I also like the cookbook's chatty, informal style. It's as a much a pleasure to read as the food is a pleasure to eat.

Comment: I love this book! The proportions are just right for my husband and myself...no leftovers (unless I want to make that much). The health information is there, and the things I have made from it so far have been terrific! The potato salad is great, as is the potato-leek soup... I am enjoying making something new from it every few days...
